Easy to make recipe: Asian Pulled Chicken Salad

 An easy to make, healthy dinner or lunch meal for all the family. You can substitute the carrots and corn for any veggies that you like best.

Asian Pulled Chicken Salad

Serves 4


1 medium whole roasted ready to eat roast chicken – skin taken off and discarded and all meat shredded from the bone.

4 carrots grated or made into strands using julienne peeler or spiraliser

5 spring onions finely sliced on the diagonal

2 red chillies deseeded and thinly sliced

small bunch of coriander roughly chopped

half a red cabbage finely sliced

1 mango peeled and thinly sliced

1 small tin sweetcorn drained


5tbsp soy sauce

1tsp honey

1.5tbsp white or rice wine vinegar

2tsp peanut butter

1tsp sesame oil


  1. Put the dressing ingredients in a bowl and mix well.
  2. Put all the other ingredients in a large bowl and mix, pour over the dressing and mix well. Divide into 4 and serve.

Get measured up to be sure to get the best possible fit for comfort and performance from your everactiv sportswear.

1) Chest: Measure all the way around your chest at the fullest points.
2) Waist: Measure around the narrowest part of your waist.
3) Leg Length: Measure from the inside at the top of your leg to your ankle.
4) Hips: Measure around the widest part of your hips.
